butterscotch banana muffins

Dan lepard, my favourite baker, uses an unusual technique in one of his recipes. First you heat sugar and a little water in a pan until the sugar is slightly caramalised, then you add sliced banana and cook until the pieces of fruit break down in the sugar. You add the resulting delicious concoction to the muffin mix. Yum!

I am going to Rennes tomorrow to visit my girlfriend, Sarah. I have only just realised that there is a national rail strike tomorrow, so I'm hoping it won't affect my Paris - Rennes journey.
