Shaggy Ink Caps

These are known as Shaggy Ink Caps or Lawyers Wigs, Coprinus comatus, and you can see why in the photo. They are very common and often found on verges or rubbish heaps where the soil has been disturbed. They grow quite tall so are easily spotted.

These are a little too far gone to eat. They can be really tasty but should be picked before the gills get to black and the whole cap starts dissolving. Just fried in a pan with a little oil and salt is my favourite way to cook them. Some like to stuff them and oven cook them.

It really is a bumper year and everywhere I go now, I am surrounded by fungi. If you are interested, there are many walks and forays at this time of year and you couldn't find a better year to see them.
