Vegetable and tofu stew
This is a mixture of squash, carrot, leek, cereriac and purple cabbage simmered in a large pan with a tin of tomatoes and a packet of silken tofu, sprinkled with some fresh rosemary. It freezes well in portions and makes a nourishing vegetarian meal.
