Boiling Today

This is Maple Sugar weekend in New Hampshire.  The sugar houses are boiling and sampling their product in hopes of selling it too.  A sure sign of spring when the sap is boiled.  It requires cold nights and warm days to get it flowing. If I remember correctly, it takes 40 gallons of sap to make 1 gallon of syrup.   This sugar house is in our neighborhood and they've been doing it for generations.  In extra is one of the collection barrels, no little tin buckets in this production.
