Sugaring Off

Dear Diary,

The sugaring off season is well under way and this weekend most of the sap houses were open to the public. There is nothing quite like stepping into a warm sap house, steam rising from the evaporator, and the smell of maple syrup everywhere. The operation goes on 24/7 until the season ends about the second week in April. Many of these enterprises have been doing this for generations. It takes great skill and expertise to render the sap into a perfect syrup.

The Sap Hound was also offering delicious baked goods (I had a maple glazed donut) as well as maple soda and hot dogs cooked in maple syrup. A very pleasant way to spend an hour on a cold day.

All the snow from Saturday night melted away. Even with the cold temperatures the sun is getting stronger thank goodness. I am hoping the check for a new laptop will come tomorrow so I can buy one and get things up and running again. It has been a long time!
