Mock/ Imitation.

These recipes are from my 1938 copy of The Glasgow Cookery Book. This book ( and subsequent later versions) were used by the students of the Glasgow and West of Scotland College of Domestic Science, The Queens College and now Glasgow Caledonian University.

I have made many things from this book, but not any of these Mock/ Imitation dishes.

Times were hard in the olden days....

I do remember my Granny making Mock cream for biscuits and desserts. Made with cornflour, margarine, sugar and milk. A true wartime recipe.
