Annual leave this afternoon. Cooked myself some awesome lunch then made banoffi pie to take to The Bears as a supper contribution later.

This is from Anna Jones’ A Modern Way To Eat, a brilliant vegetarian cookbook that is easily adapted for vegans. The banoffee pie is also from the same book and is a really tasty and simple pudding.
Nice to get my creative cooking mojo back.
