Railway Cake

AKA:- Spotted Dog or Fruit Soda Bread.
This is recipe that I got from a Fellow Blipper from Ireland; Annieone.
Thanks Annie for the lovely recipe, very tasty.
Not sure mine looks quite as nice as Annie's, but it was worth a try as her place is a bit far to go for a slice. LOL!
Also in the recipe Buttermilk was used, I very seldom buy Cow's Milk nowadays so I used Soya milk instead.
