Shortbread rounds
Gave me an excuse to keep out of the rain.
1:2:3/sugar:butter:flour
You can cream the butter with the sugar and then work in the flour or rub the butter into the flour and add the sugar... Whichever suits.
Firm into a ball and chill for a while, press out to about 1cm and cut into rounds, bake in a medium oven 160ish till just golden and sprinkle over caster sugar while still hot.
I often sub a tablespoon of cornflour for one of ordinary for a crisper shorter biscuit.
