'Masterchef' Raspberry Souffle.......
This evening my friend Daisy Days and I had a go at making these souffles....
As you can see they were a huge success and tasted delicious......!
Masterchef Ireland is being aired on TV at the moment.....and these souffles were the pressure test last week.......boy.....but I'd hate to be in that kitchen.......
these have to be the most fiddley things ever to make......worth it in the end.......!!!!
Bare in mind , the Masterchef contestants had to make these with no recipe and had to present a perfect specimen in an hour....I just love that programme......!!
Attached as promised the Recipe for the (drunk) Tea-Bread
Annie's Breac/Tea-Bread
500 g fruit (sultanas, raisins, cherries, mixed peel)
250 g Brown sugar
400 MLS tea (feel free to convert as much of this as you like into whiskey)!!!
about 50mls would be plenty... mine was 1/2 and 1/2!!!!!!!!!
340 g plain flour
1.5 tsp baking powder
2 large eggs
Grated rind of 1/2 lemon and 1/2 orange
1 tsp vanilla essence
25 g walnut pieces (optional)
Small grating of nutmeg (optional)
METHOD
Soak the fruit overnight in the tea/whiskey
Next day heat oven to 160 degrees C or gas mark 2
Line the tin (2 lb loaf tin) with parchment
Sieve the flour, baking powder and spice and fold into the fruit
Beat the eggs and add to the mix. Stir well
Pour into tin and bake for 1.5 hours
Serve warm (with butter - optional)
