Cordial

There is an Elder tree on the path to the allotment and it's covered in blooms. I once made Elderberry jam - so much effort for so little jam! So I decided to make elderflower Cordial for the first time this year. I first tasted the cordial at a Steiner school summer fair where I volunteered as a teenager. I had never tasted anything so divine before! So easy to make - just allow the flowers to sit in the syrup for 1-2 days! I didn't have citric acid so used a lemon instead. The mixture made the kitchen smell so good! The reason the bottle on the right looks darker is that I didn't have enough caster sugar so used granulated which was natural and unrefined! I was a mite worried as after making it I discovered the stems contain cyanide! I did cut most of the stems off luckily so It should be ok! Well I've drunk some and am still here!
