A tart for......

.......Thursday! I really enjoy vegetarian cooking even though I'm a meat eater. This was an experiment that worked. Puff pastry sheet, spread with a pomodoro sauce (from a jar!) & topped with lightly fried red onion, yellow pepper, courgette strips with a bit of grated cheese. Scrummy. I also made a lentil loaf, best eaten cold with salad.
