Lemon meringue pie

Blipper Bodkin came round for a meal this evening.  We had roast chicken with baby carrots and courgettes from the garden, but I was wondering what to make for pudding.

As well as looking after Scratch just now, and the cats along the road, one who needs her daily medicine giving to her, I am also looking after a neighbour's hens.  This means I have plenty of eggs, my hens are laying too, so lemon meringue pie seemed the obvious choice.  Proper eggs make things such a wonderful colour!  It was a great success and there is a little bit left for tomorrow . . . !
