Apple Pie Anyone?

The apples on our tree are starting to ripen, it seems earlier this year, but I suppose the amount of sun we had in recent weeks has hurried the process along.  T brought one in which had fallen.  I don't normally like the ones from this tree, they are too sharp for my taste, but this one was  much nicer than in previous years.  Wish I could remember what variety it is, James Grieve rings a bell but not sure.
