Damper - hot, steaming and crusty!
The recipe is simple: just flour, a little salt and
water mixed to a dough. A lot of flour is sprinkled on the base so that the loaf doesn't burn. This was (and still is in some places) the mainstay for outback pioneers and drovers of sheep and cattle looking for feed on the stock-routes of Australia.
It is traditionally eaten with Golden Syrup (Cocky's Joy)
and whatever fat is available (we had margarine) and a cup of billy tea. Not a great diet by today's standards but cheap and filling & the calories would soon be burned in such active lifestyles of farming or droving on horseback.
