Apple cake
I had a couple of apples in the refrigerator from the grocery store that I needed to use up before we started eating the fresh apples from the orchard in North Carolina that I bought this week. I had written down a recipe for apple cake that showed up on my Facebook page from somewhere as it looked so simple to make..and it was! I have to say I do like Facebook for the recipes that people share!
Smells wonderful! It has a buttery glaze on it but I think if I make it again I will just leave the icing off. Possibly will make muffins instead of cake.
Now I have to find some very light food for supper..like a salad...so I can eat cake!
Edited to add the recipe!
1 cup applesauce
1 cup brown sugar
1/4 cup canola oil
2 eggs
1 teaspoon vanilla
2 tsps cinnamon
2 cups self rising flour ( or plain flour with 1tsp baking powder and 1/2 tsp of baking soda and 1/2 tsp salt )-I used the self rising flour
Mix together well
Add 1 cup of diced apples
Pour into greased loaf pan, bake at 350 for 50-55 minutes.
I made a light glaze to go over the cake but it is not necessary.
