Apple juice the French way
The friendly couple along the road invited us for a meal last Saturday evening, we had a great time and when leaving he lent us this set of pans to make apple juice. It’s made by Le Parfait, as in the jars we had to buy last week.
The base pan is half filled water and stood on the heat.
The second tier funnels the steam up to the top tier which is like a straight sided colander with a tight fitting. Into this you place the cut up apples and sugar.
From the bottom of the second tier there is a drainage tube into which the finished juice drips into a separate pan.
The apples are red skinned with a pink flesh giving a beautiful coloured juice which tastes good, perhaps a little less sugar next time. The steamed apple flesh is like stewed apples with the skin on, we dumped this onto the compost heap. The juice will go into a screw top jar, to be consumed ‘quitesoon’.
John did this when I was pottering around cleaning, it takes a lot of apples to make a litre of juice, plus the effort, although worth it when the apples are all round us and time is available.
