Stuck
I have no idea what went wrong with my Elderberry and Apple jelly but during the boiling it became clear that All Was Not Well. But what was wrong - the pectin test was positive, the proportions were as per recipe, what else could it be?
Suffice to say that, being reluctant to throw it away downright stubborn I spent the rest of the morning fiddling - adding in turn pectin, then water, until it eventually showed signs that it might set.
Perhaps it will be an interesting addition to the Flum larder, it is certainly unique. And solid.
