Cherry lentil pie
My favorite pie. From whom too?
The pie is made from cookie dough. It has nothing to do with lentils and the name probably comes from the Austrian Linzertorte.
The Limburg lentil pie is a classic pastry. It used to be used a lot at parties like birthdays etc. Many pies were baked because the families were big at that time and all were usually present. Classically, the lentil pies are cut into square pieces, but also in the famous pudding point.
You can keep the pie for up to a week. This also makes the flan popular. The best taste is the pie the day after baking. The fruit is then slightly pulled into the dough and then tastes delicious.
My preference is for a filling with cherries instead of apricots.
