Black garlic

I discovered this on Friday at the supermarket. I’d not seen it before, so bought a bulb to try. I’ve had smoked garlic, which I love, but not black.

It’s fermented, and does appear black and squidgy, but is delicious!. It’s sweet, with balsamic flavours, and you can use it in all sorts of dishes. I didn’t however tell my husband about it. I’d used about half in our mushroom risotto, and left the rest on the shelf with the other garlic. I got home on Saturday, smelling the lovely smells of curry he’d been preparing.
He said some of the garlic had really gone off so he’d thrown it away.....
A black day!
The curry was good though.
