to be honest does it matter what colour the sky is, seeing as the rhyme only changes with the time of day the sky is viewed at.
Therefore we can assume all coloured skies at night lead to shepherds delight, and naturally any colour sky in the morning could be viewed as a warning to said Shepherds.
