Thanksgiving
Thursday
This morning, after breakfast, we reluctantly left the somewhat warmer climes of Vegas, heading back north to SLC, and ultimately to a delicious Thanksgiving dinner with a difference, prepared by Jason! We started our journey under typical Las Vegas blue skies and sunshine, but after a few hours the skies clouded over, and we later ran into rain, turning to sleet or fine snow at higher elevations. Our dinner started with a delicious herb and garlic baked Camembert as an appetizer, then continued with salt-baked leg of lamb, accompanied by Rice pilaf coquelicot (with poppy seed and dill), Smoky Black-eyed peas with roasted sweet potatoes and kale, concluding with chocolate pecan tart and/or homemade gingerbread ice cream for dessert. We felt amply satisfied!
Thankful today:
for life’s many blessings
for the spectacular scenery we have enjoyed the last couple of days
for family, widely scattered though we are (!)
for a safe journey
for our son-in-law’s enthusiasm for cooking and his culinary skills
