Hummingbird cake

Served with extra pineapple ( because I only used half the tin in the cake ).

From my Hummingbird Bakery cake book. It’s the first time I’ve made it - had 3 bananas that were so ripe they’d started to peel themselves, so had a look for a recipe for banana cake and found this. Basically, it’s a banana cake with pineapple and pecan nuts ( but I only had walnuts ). I’ll never make an ordinary old banana cake again!
