Quesong Puti

Whoosh! The week just went by oh so fast. I felt we deserved a good brekkie of our local white cheese made from buffalo milk, Quesong Puti. It's something similar to feta and the Mexican quezo blanco. I bake it in a clay crock and smother it in olive oil till it becomes all bubbly and stringy like mozzarella.
