Feb 1st....Imbolg....St. Brigid Day....!
Irish Celtic traditional Spring Festival....
So, I did some baking to celebrate....
What were supposed to be M & M Cookies..turned out more like ‘slice of cake’ cookies but are quite nice...
And a bit of a ‘mad’ Soda Bread that came in a plastic bag that you add some milk to and then ‘massage it’...eventually tipping it out into the tin foil ‘baking dish’ that comes with it and this is what you get....not bad at all, handy for someone who doesn’t want any mess!! But, I have to say, think I’d prefer the traditional way myself...!
And of course, a St. Brigids Cross...always made on this day every year.....particularly here in County Kildare as she is our patron saint, connected with Kildare Town and The Curragh Plains....the Cross which is made from fresh green reeds, eventually dries out and is probably in most Irish homes to protect them from fire....
