I haven't done any baking in a very long time, but I found a recipe for Lemon Blueberry Corn Bread and thought I'd give it a try, as it was low in sugar and oil and sounded a lovely combination of flavors. I used a baking powder substitute that is recommended for kidney patients. It baked up beautifully, but when I cut into it, it tasted dreadful. I realized it was that faux baking powder. It was so bad that I had to throw it away. What a waste of good blueberries and my time and work, and of the limited energy that I have. I won't do that again. And I was so looking forward to eating it!
