Cute salami chubs

Saturday was road trip day to the Waterloo Farmer's Market, to St. Jabobs, to Picard Peanuts, and lots of other places. At one Market deli we saw these festive salami chubs. Cows at left were beef, of course. The piggies were pork, naturally. But it's the red Santa chub that have me worried. What are they made of...? O_0

Last time we went to the market, we stopped in Elora - a picturesque village used as a location in a lot of movies including: An American Christmas Carol (Henry "The Fonz" Winkler); Simon Birch (Ashley Judd, Jim Carrey, Oliver Platt, David Strathairn); and Trapped in Paradise (Nicolas Cage, Jon Lovitz, Dana Carvey).
