Roast Gammon Honey and Mustard Sauce

This is now a firm family favourite and great for Boxing Day. It does take some preparation with two hours soaking followed by two hours slowly simmering in a pan of boiling water and then the slow roasting for 2-2.5 hours. The sauce is made from honey, maple syrup, dark muscovado sugar, few shakes a Worcestershire sauce, French wholegrain mustard and English mustard. Balance the sweetness with lemon juice, lightly colour with chicken gravy and thicken with cornflour. Enjoy!
