Elderflower gin in the making

75cl gin, 30 heads of Elderflowers, 7.5 tablespoons of sugar. Put it in a jar, shake it once a day for a week. Serve with tonic, ice, lime and mint. The roses are there to look pretty although a few petals in the mix would turn it a nice pale pink
