Elderflower Champagne

My elderflower cordial making will finish with the third batch, to be bottled tonight. These are small batches, commensurate with the flowers available at the time. Yesterday Master Flum mentioned that he had forgotten to make elderflower champagne. On our way back to the car we passed an elder tree, so I put up a batch today, on the proviso he supplies the bottles.

The Flumlet and he came round with Father's Day gifts for Mr Flum; we showed him the shells that he had been desperate to take home yesterday after our sandcastle-making, and that I had washed. He showed very little interest and proceeded to draw pictures! I have included an extra photo of the envelope he wrote - not yet five and trying so hard to write!
