Elk
Elk medallion, roasted beets, and kale with maui onion. Also a baguette (not pictured—I forgot it in the kitchen when the picture was taken). Wine: Clos de los Siete Malbec Blend Valle de Uco 2015.
This was my first time making (or eating) elk. It is very lean and fairly similar to lean beef in flavor, though more like venison in texture (a bit chewy). I seared it with a rub of smoked paprika, cumin, salt, pepper, and a pinch of chipotle powder. Quite nice. The veggies were tasty, and the wine was decent.
