Plum
was my husband’s pet name for me. He never called me Jean.
Plums are a very healthy fruit and are a great source of vitamins and minerals.

Jean’s recipe for Plum Pie:
Throw 8ozs of good butter (Irish) and 8 ozs of caster sugar into a bowl and mix well together until creamy.
Throw 8ozs of self raising flour, 3 large eggs, dessert spoonfull of ground almonds, teaspoonfull of vanilla extract (not essence) into that same bowl and a lash of milk. Mix this lot in gently. (In the cookery books, they call this folding in). The mixture shouldn’t be too runny. This is important.
Wash 10 plums and dry well. Stone them and slice thinly. Sprinkle a little flour over them to keep ‘em dry.
Gently throw the plums into the mix and stir once. Lightly grease a baking tray (12x10 approx) and spread mixture into it. Sprinkle flaked almonds on top.
Bake in a 180• oven for approx half hour (it can’t dry out so watch this). It’s best served hot with a dollop of cream
It has rained all day so far in Dublin. So no swim or tennis this morning. When you work weekdays and the weather is lovely, it’s annoying when you wake up to rain on Saturday. (A small gripe from me)
At least it’s not raining in Wimbledon. I am parked in front of the telly and enjoying the tennis coffee and cake to hand.
