TRADITIONAL RECIPES OF VERONA: Bollito con la Pea

The Pearà is the main dish of the tables on Sunday in Verona. The pearà, venetian term which means "pepper", is a sauce made with bread crumbs, beef marrow, Parmesan cheese, butter and extra virgin olive oil, beef broth and pepper. For a perfect realization is fundamental a slow and long cooking (at least 2 or 3 hours). This sauce is traditionally served with boiled meat mixed, also known as "lesso".
The origins of this dish, poor and agricultural, are unknown; Legend has that Alboino's cook, King of the Lombards, invented it because he needed a food able to give strength to Rosamund, the king's wife, that was left to starve after the assassination of his father. What is certain is that, together with the boiled, pearà was the main food of the poor families. In the second half of 1800 boiled, and then also pearà was introduced in the menus of the nobility, by clearing the image and the diffusion of the dish.
