Steamed shredded vegetables with cheese and herbs

Something quick and filling for tonight’s meal after a long strenuous day at the Peak. After Spin class, gym, Fit4Life classes and the obligatory coffee with classmates I needed something quick and filling for my evening meal. Steamed shredded vegetables (carrots, cauliflower, onion, French, broad and runner beans, courgettes and baby squash) topped with chopped herbs (parsley, fennel and coriander) and a large helping of grated mature cheddar cheese fitted the bill. Not an easy/white carbohydrate in sight.
