Let them eat cake

So here is the vegan pineapple cake with coconut cream topping and fresh raspberries. I’m not vegan but thought this recipe sounded amazing. It was really nice. Took it to work and it went down a treat.

Here is the recipe if anyone is interested. I used melted coconut oil, the written recipe states sunflower oil but his little video says coconut oil. I thought that would work better as it’s a coconut topping. Also switched coconut milk for coconut cream as I wasn’t convinced milk would be thick enough.
