Dried Chiles

There are many different types of chile for sale at the local market. They look the same, but I am told each has their own unique taste. I'm sure we have sampled some, if not all, of these in many local dishes at our favorite restaurants, though I couldn't tell which is which by name or taste. Maybe some day I'll buy, but in the meantime it will just be photographs.
