Lolly Cake

Well as far as i know this is only found in New Zealand but I don't know where it was"born". This is part of a wee project to get me into the mood before I go round New Zealand in April.

A lolly cake is made from sweets called Fruity Foams which are similar to our Shrimps and Bananas foam sweets. It also contains butter, malt biscuits and sweetened condensed milk and then covered with coconut in a form of a log.

I'm hoping to get a piece or two when I head over to NZ and will be able to pick it up at most grocery stores, and some petrol stations and dairies!
