'Roasted Tomato Soup'.........!

This is what it said to do .......and this is how it turned out....!!!
I think I've just found another 'Hero'......Nigel Slater....
I know he's around awhile but I have just discovered his books...
and altho' I'm a fan of many cooks and own dozens of books...
I think his is the most gloriously described essence of simplicity...
I haven't read anyone else with such a passion for food...
Boy is he a man who 'sings from my Hymn-sheet'.


OK enough.....today is so wet, cold and miserable....there was only one thing for it...
Turn on the cooker and see what I could rustle up......!
Went without saying....had to make bread
and then really hot-soup came to mind...
So...cherry Toms to be used up....
into the oven with ...rapeseed oil ..salt and pepper....teasp. of red-wine vinegar..sprinkle of brown sugar and tuck in a bayleaf broken in half...
My God the smell from the oven!!!!!!!!!!
Then tip a can of tomatoes(Italian ones+can of water) into a sauspan......
add a veg stock cube and the roasted Toms...
Bring up to a good simmer and Blitz......
The flavour is indescribable.....gorgeous.....big hunks of the brown bread..cheese...salad leaves......!
Lunch was wonderful...
I am now going to continue to cook....the simplest way.....with the best ingredients..adding the best complimentary flavours I can find and let the food do the talking.....no more 'cheffy' nonsense...!!!!
And I never follow a recipe to the 'letter'...and that in my opinion is the secret.....I always add my own twist...(however small)..
That is what the man says and I totally agree with him....
In fact...I think I agree with almost everything he says......
except.....he doesn't like kitchen gadgets....
and I am QUEEN of the gadgets...!
Sorry for going on ..meant to be a short Blip today....but I am slightly obsessed with food....
Have to go now and make another Apple Cake.......!

Kittys had some of the bacon that I had with the brown bread...said he'd pass on the soup tho'....so he's happy too.....
