Wet Market
This is where you get to see the real Hong Kong life - wet markets. You get the picture of a traditional market in a hot climate before the days of refrigeration. The rationale was to purchase a live animal just prior to be eaten. That was the only way to ensure the food was fresh.
I got lost here a few months back.
So, you pick a chicken, it gets beheaded, defeathered, you pay and leave.
Bon appetite!
