Rabbit

Rabbit loin on a bed of arugula with extra mustardy vinaigrette, and roasted broccoli.

Wine: Decoy Merlot Sonoma 2017.

The rabbit came out nicely and went well with the dijon, vinegar and olive oil sharpness, and earthy bitter arugula flavors. The wine, a budget option by Duckhorn, was drinkable, but my husband was far more taken by it than I was.
