Thankful...
I'm thankful to be indoors today with Storm Brendan battering the house outside. So what's a girl to do...why, bake a cake of course!
For some reason, since Mr A has been on a restricted diet I have been buying him gluten-free & dairy-free cakes and biscuits - but why on earth didn't I bake my own? After all, I usually make home-made cakes rather than shop-bought. So, I checked the pack of Vitalite and found that it's suitable for baking (instead of say, butter) and this is the result - my Coffee Fudge Cake. It even tastes "normal" despite using Gluten-Free flour and I'd go so far as to say, quite delicious!
When I was a child, I used to come home from school to find that my Mum had been baking and I have fond memories of her wire cooling rack laden with butterfly cakes. She didn't work (outside the home) since well before I was born, so she was always there for me. Whatever you do with your own children (I chose to go back to work in Finance - part-time at first), you always have feelings of guilt. So, although I was at work, I also did lots of home baking. In the future, I do hope My Boy will be able to look back to the past and believe that I did my best.
I also took the opportunity to wash three (of the six) kitchen chair cushion pads and they are now drying on my utility washing lines. The other three will be done tomorrow. Oh, and I know this sounds silly, but such a simple task is so satisfying (I don't get out much - ha ha).
