Sorry, it's a boring food blip but I've had a full-on day, mainly meetings. Here's the recipe. Sliced potatoes and parsnip, parboil. Slice an onion, a bulb of fennel and a couple of cloves of garlic. Saute that lot in olive oil, it's really just to get it all covered in oil. Add some sliced olives (today I used green olives stuffed with garlic), season and bung in a slow oven. This is how it looked after being in the oven. I cooked a big lot because it'll do for a few meals - this evening it's with a chicken breast stuffed with the last of the Christmas Stilton, wrapped in bacon and baked.
