Sweet Potato Black Bean Enchiladas
I saw this recipe online and wanted to try it immediately because black beans are the best and so are sweet potatoes.
Basically I made the black beans from scratch with some Sazon Goya and scallions. Then I boiled a small sweet potato. I also sauteed some onions and green peppers with taco sauce. Then it was add and roll time! I microwaved two corn tortillas for like 20 seconds so it was easy to roll. So on the tortilla I put the sweet potato and the veggie mix, then the black beans, some shredded mozzerella cheese, topped with cilantro then roll roll roll! I put tooth picks in the middle of both of mine so they wouldn't fall apart in the oven. I glazed the enchiladas with some olive oil so they could get crispy. Put them on a baking pan with aluminum foil. 350 degrees for 15 minutes.
Super yumm but very filling! :)
