Homemade is good. I must have bought these when in Switzerland, and it found its way back with me. I do remembering making the most expensive marmalade there as Seville oranges were difficult to source. ( I tried both France and Germany as well as Switzerland!) Today was my final batch of UK marmalade. My conclusion is that the ones from Saffron Walden market seemed juicier than those from Waitrose. The jam thermometer was useful, as was my Lakeland temperature spoon, but I still rely on the saucer test to get the right set.
