Huevos Rancheros

Huevos rancheros and a mimosa. (Appetizer—not pictured—was a baby beet salad with goat cheese, micro-greens, and kumquats, also served in a small cast iron skillet.)

We had brunch today with one of my husband’s coworkers. The food and company were both excellent.
