Salmon Croquettes

Salmon croquettes, sauerkraut, pickled beets and radishes, and radish green salad. Wine: Kirkland Signature Chardonnay Russian River Valley 2017.

This came out very well. The salmon croquettes came out more delicious than they have before—their seasoning was centered around Timut peppercorns from Nepal, which have a wonderful rather strong citrus oil and floral flavor.
