Pork Chop
Sliced pork loin chop with queijo de coalho and arugula salad. Wine: the remainder of last night’s rioja.
This is an admittedly odd dinner thrown together at the last minute after grading the first set of exams for the semester. I had the pork in cooking by sous vide, but I was busy and didn’t start any accompaniments I intended before it was time to eat. This strange—but not bad—improvisation ensued.
