Tonight we went to a neighborhood Mexican place that had a great Monday night “date night” special (BOGO entrees). My planning schedule had been crazy this week. I have a late-start class beginning tomorrow that I didn’t know I would be teaching until three weeks ago. I’ll be getting home rather later Tuesdays and Thursdays. It remains to be seen how this will impact cooking for the rest of the semester.
