Stirring it up
Today I made one of the layers for the wedding next month. It’s difficult to give sense of size but this is an enormous cake, 12 inches wide and 5 inches deep. It’s nut and dairy free and I’m not sure what to do about marzipan as it’s just occurred to me that almond marzipan can’t be used. I have found a recipe for marzipan replacement using semolina so I’m going to have to experiment. I’ll be making the top tier tomorrow.
