Indoor field work

What do you do when the weather is just wet and windy for weeks and you really want your Environmental Systems and Societies students to practice their quadrat/field trip skills? You simulate an ecosystem indoors (with 3 species, sunflower seeds, black eyed beans and split peas scattered around the classroom) and have them practice indoors!
